Recipe: Apple bread

Good and nutritious bread with apple and dried fruit. Baked with oat flour and teff flour, which are two types of flour that are rich in iron. It is also an easy bread to bake as it does not need to be fermented.

Ingredients:

  • 5 dl oatmeal (about 4 dl oatmeal)
  • 2 dl teff flour (or the same amount of oat flour)
  • 2 teaspoons bicarbonate
  • 1 tsp salt (for children over 1 year and adults)
  • 2 eggs
  • 3.5 dl yoghurt
  • 1 large apple
  • 1.5 dl chopped dried figs or dried apricots

Instructions:

Turn on the oven at 180 degrees. Mix oatmeal into flour if you don't buy ready-made oatmeal flour. Then mix all the dry ingredients. Beat the egg fluffy and pour in the yoghurt. Mix gently. Then stir in the dry ingredients. Grate the apple and squeeze out the liquid. Fold it into the batter together with the dried figs/apricots. Spread the thick batter into a pan for mini-breads or a parchment-lined bread pan. Bake in the oven for about 15 minutes (small pieces of bread) or 45-50 minutes for a loaf.
